Opal Knudson, 86, Grand Forks, died Monday, October 12, 2020 in Valley Senior Living on Columbia.
Opal Lund, the daughter of Olaf and Bertha (Evenson) Lund, was born at Gonvick, Minnesota on December 13, 1933. She graduated from high school in Fosston, Minnesota.
Opal married Boyd Knudson in 1954 at Fertile, Minnesota. They made their home in Virginia, MN, Thief River Falls, MN, and moved to Grand Forks, ND in 1959.
Opal was employed by the Westward Ho in Grand Forks, working many years at the Palace Restaurant.
Boyd Knudson died in January 14, 2020.
Opal enjoyed time spent at Maple Lake. She loved to walk, going out to eat, and was an avid fan of watching UND hockey on TV.
Opal is survived by her children, Jeff (Angela), Jay, Jon (Laurie), Jana, and Jim (Kim), all of Grand Forks; 7 grandchildren, 12 great-grandchildren; a sister, Donna Bringman (Don); and several nieces and nephews. She was preceded in death by her daughter, Jennie; sisters, Goldie Tverberg and Joan Haugen; brother, Julius “Sonny” Lund; and her parents.
Services will be 1:00 p.m. Friday, October 16, 2020 in Amundson Funeral Home, 2975 S. 42nd St., Grand Forks with visitation one hour prior to the service in the funeral home. Interment will be in Memorial Park North Cemetery, Grand Forks. Due to Covid 19, masks will be required to attend, and social distancing will be observed.
