Kathleen "Kathy" A. Cook, 65, of Grand Forks, ND died Saturday, December 3, 2011 in Altru Hospital, Grand Forks. Kathleen Ann Cook was born June 11, 1946 the daughter of John N. and Christine( Knutson) Cook. She grew up and attended school at St. Catherine's School in Valley City, ND. She attended the University of North Dakota and earned a Bachelor of Science with a double major, nutrition, dietetics and education. She served her dietetics internship at St. Mary's Hospital and Mayo Clinic in Rochester, MN. Kathy's employment included being the staff dietitian- clinical at St. Mary's Hospital and Mayo Clinic in Rochester, MN; staff dietitian and in-service coordinator at the Kenosha Memorial Hospital, Kenosha, WI; the Director of Dietary at the Riverview Healthcare in Crookston, MN; a Consulting Dietitian for many nursing homes; Team Leader of Support Services at the Valley Memorial Homes, Grand Forks; and the District Sales Manager for U.S. Foodservice, GFG Division. Kathy was an active member of the Greater Grand Forks Dietetic Association and held many officer positions. She also was involved in the North Dakota Dietetic Association, North Dakota Consultant Dietitians, North Dakota Board of Dietetic Practice, which is appointed by the Governor, and the Executive Board of Home Delivered meals in Crookston and Grand Forks. Kathy was honored by many professional organizations and honoraries such as the American Business Women's Association, where she was elected the Woman of the Year by the Forx Chapter and she was the North Dakota Outstanding Dietitian of the year in 1992. Kathy dedicated her professional life to nutrition and dietetics and through the generous gift of a friend, Linda Laskowski, she had the kitchen of the Gorecki Alumni Center on UND's campus named in her honor "The Kathy Cook Kitchen". Kathleen is survived by: Friend: Janice Schuh - Grand Forks Sisters: Dorothy (Stephen) DeHaan - Grand Forks Marjorie (Thomas) Siems - Bismarck Jeanette Skjeret - Jamestown Brother: William (Barbara) Cook - Valley City Several nieces and nephews She was preceded in death by her parents and a brother-in-law: Leon Skjeret.
